Cinnamon Apple Rice Cakes

You've tried adding mix-ins to our Cookie recipe, but have you tried layering on seasonal ingredients? In this recipe, you later healthy sprinkles of cinnamon and sugar with slices of super crisp apples. Then bake, wrap and enjoy!

A couple of notes: the cinnamon + sugar quantity below is merely a suggestion. If you love cinnamon sugar, you may want to add more. Sprinkle to your liking! For the apple, we like to use a mandoline - a slicing tool - to get almost paper-thin slices but you could use a knife. You may not have space for all of the sliced apples - no worries. Add, again, to your liking!

Cinnamon Snickerdoodles w/Apples

1 batch of cookie mix

1 crisp apple, sliced very very thinly

1 - 2 tbsp ground cinnamon mixed with 3-4 tbsp granulated sugar or turbinado sugar

Preheat your oven to 350°F degrees and line an 8x8 inch baking pan with parchment paper. Prepare the cookie mix according to directions. Sprinkle 1/2 of the mixed cookie dough over the bottom of the prepared pan, and press into a flat, even layer. Sprinkle with 3/4 of the mixed cinnamon + sugar, then layer sliced apples over to cover. Sprinkle with remaining cookie dough, and then with remaining cinnamon + sugar. Bake according to package directions, until golden brown (about 20-25 minutes.) Allow to cool, cut into bars, and enjoy!
