Skratch Apple Cider Oatmeal Cookies
Skratch employee Barbara is the Cookie Queen. She put a Skratch spin on one of her favorite recipes and was nice enough to share this recipe for the rest of us to enjoy!
Apple Cider Oatmeal Cookies
Time: 2.5 hours (15-min prep, 2-hr to chill dough, 15-min to bake per sheet)
Yield: 24 cookies
2 cups old-fashioned rolled oats
1 cup all-purpose flour
½ tsp baking soda
1½ tsp ground cinnamon
Pinch of ground nutmeg
Pinch of ground ginger
Pinch of ground cardamon
Pinch of allspice
¼ cup unsalted butter, melted
½ cup unsweetened applesauce
¾ cup dark brown sugar
1/3 cup granulated sugar
1/3 cup Skratch Hot Apple Cider Sport Hydration Drink Mix powder
1 large egg1 tsp vanilla extract
½ cup finely diced apple
1/3 cup chopped walnuts
1 and ½ cups powdered sugar
2-3 tablespoons milk
1.In a large mixing bowl, stir together oats, flour, baking soda, cinnamon,nutmeg, ginger, cardamon and allspice. Set aside.
2.In a medium mixing bowl, whisk together butter, applesauce, brown sugar, white sugar, and Skratch Hot Apple Cider Sport Hydration Drink Mix powder until combined. Whisk in the egg and vanilla.
3.Pour the wet ingredients into the dry ingredients and mix gently until just combined. Fold in apples and walnuts.
4.Refrigerate dough for 2 hours.
5.Preheat oven to 375⁰ F. Line cookie sheets with parchment paper.
6.Drop cookie dough by spoonful (about 2 tablespoons per cookie), 3 inches apart. Don’t crowd...cookies will flatten and spread as they bake.
7.Bake for 14-15 minutes until lightly brown and edges are set.
8.Cool on cookie sheet for 10 minutes, then transfer to cooling rack to cool completely before icing.
9.Whisk together powdered sugar, Skratch, adding milk a little at a time until smooth and desired consistency.
10. Drizzle cooled cookies with icing and allow icing to set.
