Nutella Rice Cakes

Looking to put your favorite spread into a rice cake? We got you.
Nutella or hazelnut butter is best when the rice cake is a sandwich. Simplest would just be a plain white rice with a little bit of sugar, lime, salt, and butter or coconut fat to taste. Beyond plain Nutella by itself, slices of strawberry or banana are also great. You can even do a layer of Nutella with some almond butter or peanut butter.

Nutella Rice Cake
3 cups uncooked sticky rice (calrose)
4 ½ cups water
¾ cup coconut milk
¼ to ½ cup raw sugar to taste
juice of 1 lemon (about 3 tablespoons)
1 ½ teaspoons coarse salt, or to taste
1 cup nutella or more/less to your liking (just beware if you add too much the layers can slide)
1 pint fresh fruit

Combine rice, water, and a dash of salt in a rice cooker and let cook.
Transfer cooked rice to a large bowl and add coconut milk. Add sugar and lemon juice.
Stir thoroughly and salt to taste.
Let rice cool then spread half onto a 9” x 13” baking pan. Press flat.
Warm Nutella and layer on that with the fruit evenly over the rice.
Gently press the remaining rice over the fruit and nutella.
Let sit for 5 minutes, cut into squares and wrap.
