Apple + Pumpkin Buckle

By now you know that our Cookie recipe makes a mean chocolate chip cookie, berry blondie, and vegan cookie bar, and that all of them fit sweetly in your pocket or pack for rides, runs, and adventures. But the Cookie recipe also does so much more!

We’ve been whipping up this Apple + Pumpkin Buckle with our Cookie Mix lately and serving it at our weekly breakfasts (with dollops of yogurt and drizzles of maple syrup). We've also noticed it works quite well as a dessert for our impromptu dinner parties.

This buckle recipe comes together in just a few minutes. You can swap out the apples + pumpkin for other seasonal fruits if you like (We like peaches, berries and pears in particular)! We think it will make a great dessert for upcoming holiday gatherings with family and friends! 

We make this buckle as written below in a large 9x13 inch pan, but you could make a smaller buckle in an 8x8 or 9x9 inch pan by simply cutting the recipe in half.

Apple + Pumpkin Buckle w/Skratch Labs Cookie Mix

4-5 large apples, sliced thinly (you can peel the apples if you like - we leave them unpeeled.)
juice of one half lemon
1 cup canned pumpkin puree
2 batches of our cookie mix batter
yogurt, ice cream or creme fraiche for topping (optional!)

Preheat your oven to 350F degrees. Arrange the oven racks with one smack dab in the middle.

Pull together the ingredients you’ll need for the buckle, and also a 9x13’ rectangle pan. (An oval will also work if you have one, as we used here.)

Slice the apples as thinly as possible, and place them in a large bowl squeezing the juice of the lemon over the slices as you go (this prevents them from oxidizing and turning brown). Set the apples aside.

In a medium sized bowl, mix up the cookie recipe. Your hands are the best tools for the job here!

Next, assemble the buckle. Layer half of the apples with half of the pumpkin in the prepared pan, then cover with half of the cookie mix. Repeat with the remaining ingredients being sure to press the mixture into the pan once all of the ingredients are in.

Pop the buckle in the oven and bake until the apple juice is bubbling from the sides of the pan, and the buckle is golden brown, roughly 30-45 minutes.
