Party Cookies

This is the cookie we make when we can't decide if we want a chewy cookie or a crunchy cookie, a sweet cookie or a salty cookie. We just take all the good stuff (peanut butter, pretzels, chocolate, and espresso) and throw it in and have the Party Cookie!

Party Cookies
1 batch of Skratch Labs Cookie batter

1/2 cup mini pretzels, crumbled

1/2 cup chocolate chips (milk or dark)

1/3 cup peanut butter or other nut butter

2 tablespoons espresso powder

Preheat your oven to 350F degrees and line an 8x8 pan with parchment paper. Next, in a big bowl, combine the cookie mix batter, peanut butter and espresso powder. Using your hands (because this is really the best tool for the job) combine the ingredients until the mixture is moist and crumbly, and there aren't any big chunks of peanut butter or butter visible.

Transfer 3/4 of the cookie mix to the prepared pan. Sprinkle the crumbled pretzels and chocolate chips over the top, then cover with the remaining 1/4 of the cookie mix and press the cookies into the pan evenly with your hands.

Pop the cookies into the oven and bake until just barely golden brown, roughly 25-30 minutes. Let cool completely before cutting, wrapping and enjoying!
